I compiled audacious from github (head) and from the beta tar but I don't get a start menu icon after make install.

How do I get the start menu icon installed?

No offense, but I think you should become more familiar with the way Linux applications and desktop environments work before attempting to install one as complicated as Audacious from source.

This would be good reading: https://wiki.archlinux.org/index.php/Desktop_entries

For now, it may be best for you to install Audacious from your package manager.
